Great mates Matt Stone and Mike Ico wondered how many other people dreaded the trip home on the M2 after seeking a little creativity in a meal and great coffee that Sydney’s city has to offer. After just enough drinks one night, the notion to bring a part of the city to the rolling hills of Sydney’s northwestern suburbs was birthed. And these boys were the perfect blend to pull it off. They grey up in Sydney’s suburbs and so knew the area, the people and just what it needed. After living in the city for a time, these boys returned to the Hills without any hospitality experience but a heart and vision to build everyone’s local.
The Baron seemed a fitting name for this strapping café – not only reflecting the nature of its owners, but also named after Frenchman Baron Verincourt de Clambe, the first free settler in Castle Hill in 1802. The Baron is rooted in history, proudly suburban and champions Sydney’s Hills District. The boys travel Australia and cross borders in search of menu inspiration, networks and smart business management. They not only know coffee and food but champion local farmers, businesses and push boundaries in efforts to change the culture of the suburbs; creating community and events you actually want to be part of!
